Plantain Fritters (Vazhakkai Bajji)

Plantain Fritters (Plantain Bajji) Ingredients Plantain - 2 cut into thin slices Besan flour - 1 cup Rice flour - 1/4 cup Turmeric powder - 1/2 tsp Chilli powder - 2 tsp Salt to taste Cooking soda a pinch Water Oil for frying Method: 1. Mix Besan flour, Rice flour, Turmeric powder, Chilli powder, Salt, Cooking soda. Add water to make a batter. 2. Dip the plantain slices into the batter, coat it evenly with the batter & fry them in the hot oil. 3. Enjoy the Hot Plantain Fritters (Vazhakkai Bajji) with coffee or tea, its a great evening snacks. Coconut flan Ingredients Egg - 2 Condensed milk - 50 ml Coconut milk - 100 ml Vanilla essence - 2 drops Sugar - 30 gm Method: 1. In a mixing bowl add Egg & Sugar whisk it vigorously. 2. Add condensed milk, coconut milk & again whisk it. 3. Add Vanilla essence to the mixture & whisk it. 4. Pour the mixture in a pan & warm it for 2 minutes. 5. In a long tray pour water on top place the silicon mould, pour the warm mixture & cover it tightly with silver foil. 6. Double boil it for 40 minutes in the oven. 7. Once it cooked, chill it in the refrigerator demould & serve it cold.
