Haleem tantalises Kolkata_s taste buds during Ramadan

Kolkata, July 17 (ANI): The sales of Haleem, a creamy meat delicacy usually made with mutton and lentils, have surged during the holy month of Ramadan, tantalizing the taste buds of Muslims in Kolkata as the fast is broken with special foods at sundown. Foodies in Kolkata, which is known for its plethora of food options ranging from snacks to main course, travel to special joints for taking a bite of the dish. Ramadan has spurred sales of Haleem across the city as it makes a full meal for fasting Muslims due to the nutritive value of its ingredients like meat, pure ghee backed by the right choice of spices, wheat, clarified butter and dry fruits. Haleem literally means _patience_ because it involves long hours of preparation. It is made of wheat, mutton, gram pulse, curd, onions and vegetable oil with sprinkling of spices. It is served with lemon juice. Eating joint owners said they usually run out of Haleem, which is made only during Ramadan, in less than three hours, well before the breaking of the fast. Jul 17, 2014
